- 1 sheet puff pastry, thawed
- Sugar, for sprinkling pastry edge and peaches
- 1/3 cup almond paste
- 2-3 peaches, pitted, cut in half, and sliced
- Vanilla ice cream, optional
Pre-heat oven to 400 degrees
On a floured surface, unfold pastry sheet. Roll pastry sheet into a 12 inch square. Place the pastry sheet onto a parchment lined baking sheet. Brush the edges with water. Fold edges in 1/2 inch, pressing firmly to create rim to hold fruit in tart.
Brush edges with water and sprinkle evenly with sugar. Spread the almond paste over the bottom of the tart. Neatly place the sliced peaches in rows to completely cover the bottom of the tart. Lightly sprinkle the peaches with sugar.
Place the baking sheet in the middle of the oven. Bake for 28-30 minutes or until crust is golden brown.
Slice and serve warm or at room temperature. Serve with vanilla ice cream, if desired.
