Mini Eggplant Crust Pizza

  • 1 large eggplant cut into 1/4 inch slices
  • 1 Tablespoon salt
  • 2 Tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried Italian herb seasoning
  • 1 cup pizza sauce
  • 1 cup ricotta cheese
  • 2 Tablespoon chopped fresh basil


Pre-heat oven tp 400 degrees F

Line counter with paper towels. Place the eggplant on the towels and sprinkle with the salt and let it sit for 10-15 minutes. Rinse and pat dry.

In a small bowl, add olive oil, garlic and Italian seasonings. Stir to combine and brush each side of the eggplant slices. Place on a parchment lined baking sheet. Bake for 12-15 minutes. Remove from oven and flip each eggplant slice over. Top each slice with a tablespoon of pizza sauce and a dollop of ricotta cheese. Return to the oven and bake for another 8-10 minutes.  Garnish with fresh basil and serve.
