Ingredients
- 1lb ground turkey
- 1 package taco seasoning
- 1/2 cup water
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 cup frozen corn
- 1 15 oz. can black beans,drained and rinsed
- 2 8 oz. cans tomato sauce
- 1/2 teaspoon garlic powder
- 6 green bell peppers with tops, seeds and veins removed
- 1 cup shredded Mexican cheese blend
- Sour cream, optional
Directions
Pre-heat oven to 375 degrees.
In a large sauté pan on medium heat, add ground turkey. Brown and break up the meat for approximately 5-7 minutes. Add taco seasoning, water, cumin, chili powder and corn. Stir to combine and simmer for 5 minutes. Add black beans, gently stirring to combine. Turn off heat.
In small bowl, add tomato sauce and garlic powder. Stir to combine.
Grease bottom of 9” X 13” baking pan. Line with peppers and fill each pepper with prepared filling. Pour tomato sauce over the peppers and sprinkle with the cheese. Cover with foil and bake for 35-45 minutes or until peppers are tender when pierced with a knife. Serve with tortilla chips, if desired.
