Ingredients
- 1 Tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper (remove core and seeds before chopping)
- 1/2 cup chopped red bell pepper (remove core and seeds before chopping)
- 1/2 cup chopped yellow bell pepper (remove core and seeds before chopping)
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 2 packages of quinoa and brown rice
- 3/4 cup red kidney beans, drained and rinsed
- 1 Tablespoon Italian parsley, chopped, optional
Directions
In a sauté pan on medium high heat, add olive oil, onion, green pepper, red pepper and yellow pepper. Sauté for 2-3 minutes. Remove from heat and set aside.
Prepare quinoa and brown rice according to package directions. Put in serving bowl, add kidney beans and pepper mixture. Stir to combine. Garnish with Italian parsley, if desired.
