Smoked Peach Bacon Jam

Ingredients

1 lb bacon

1 Vidalia onion

6 smoked peaches

1 tsp black pepper

2 Tbsp Dijon mustard

2 Tbsp Worcestershire

1/4 cup apple cider vinegar

2 Tbsp bourbon

Cook bacon over medium high heat until crisp. Drain, reserving 2 Tbsp of fat renderings. Add onion to backon and renderings, stir until onions are translucent. Add remaining ingredients and stir. Bring to a boil then reduce heat to simmer. Cook for 30-40 mins until jam has thickened.
