Broccoli Salad with Mandarin Oranges and Bacon

  • 1 head of broccoli, cut into florets (about 4 cups)
  • 1 can mandarin oranges, drained
  • 1/2 cup cashews
  • 1/4 cup red onion, chopped
  • 6-8 slices bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 1 Tablespoon sugar
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon canola oil

In a large bowl, add the broccoli florets, chopped red onion, bacon and cashews.

To make the dressing, add the mayonnaise to a small bowl with the rice vinegar, canola oil and sugar and mix together.

Stir the dressing into the salad. Once the salad is coated, add the mandarin oranges and carefully mix them into the salad making sure that they stay whole and don’t break into pieces.
